Pumpkin Pudding

Pumpkin "Pudding"

1/3 cup cooked pumpkin
1/2 tsp cinnamon
2-6 TBSP peanut or other nut butter of choice
pinch of salt
Blend all in a food processor, or with an immersion blender, until completely smooth, or keep it chunky, whichever you prefer.

I've played with this by substituting chai spice for cinnamon, using butternut or other varieties of winter squash, varying the proportions of ingredients, adding milk when my pumpkin was on the drier side. The possibilities are endless.
