Bacon and Onion Cheese Balls

  • 5 strips sodium-reduced bacon
  • ½ C natural (skin-on) almonds, toasted
  • 1 package (10 ounces) soft goat cheese (chèvre)
  • 2 green onions, finely chopped
  • 1 clove garlic, finely minced
  • ½ tsp pepper 

In a non-stick skillet, cook bacon over medium heat until crisp, about 5 minutes. Using a slotted spoon, transfer to a paper towel-lined plate to drain. Chop into ¼-inch pieces. Meanwhile, in a food processor, pulse almonds until coarsely ground. Transfer to a shallow bowl. In a large bowl, combine bacon, goat cheese, green onions, garlic, and pepper. Roll by scant 1 Tbsp into balls. Roll in almonds, pressing to adhere (Make-ahead: Refrigerate in an airtight container for up to 24 hours.) Makes about 24 pieces.
