Date-filled oat cookies
1 ½ cups all-purpose flour
3 teaspoons baking powder
½ teaspoon salt
1 cup shortening and butter or 1 cup margarine, softened
1 cup brown sugar, packed
½ cup milk
2 cups rolled oats
Mix dry ingredients. Cream shortening/butter or margarine and sugar. Add milk gradually. Mix well. Add flour mixture to creamed mixture. Stir in oats. Chill dough several hours. Roll out 1/8-inch thick. Cut 2-inch circles. Place on greased sheet. Bake in 350°F oven for 16 - 18 minutes. Cool. Spread with date filling to form a sandwich.
For date filling combine:
2 cups chopped dates
2/3 cup water
1/3 cup brown sugar, packed
1 tablespoon lemon juice
in a saucepan. Cook over medium heat until thick. Stir constantly. Cool.
These cookies are best if they sit for a couple of days to soften.
