Boiled Raisin Cookies

Back-to-school recipe for the bento box!

 Boiled Raisin Cookies

 In a saucepan combine 1 cup raisins with ¾ cup water. Boil raisins for 5 minutes. Cool.

  • 2 cups flour
  • ½ teaspoon baking soda
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • 1 ½ teaspoons cinnamon
  • ½ teaspoons nutmeg
  • ½ cup shortening
  • 1 cup sugar
  • 1 egg

Sift dry ingredients. Cream shortening and sugar. Add egg. Add cooled raisins and then flour mixture. Stir. Drop 1 tablespoon of the mixture on a cookie sheet. Bake at 350 degrees for 12 to 15 minutes.
