Korean sandwiches or romaine wraps
Feeling full in anticipation of Thanksgiving feasting? Here’s something quick and easy that can be made with stuff already in the fridge. I encountered these in South Korea while fortunate enough to participate in a Rotary Group Study Exchange. Start with some big leaves of romaine. (Bibb lettuce also works and I suppose iceberg would work as well.) Layer in whatever you have in the fridge in terms of veggies, protein, condiments, leftovers from a charcuterie board, etc. Fold another piece of lettuce on top or eat open-faced.
