Recipe for a single lady.
- 1 English muffin
- 2 tablespoons unsalted butter
- 1 large egg
- 1 slice of Canadian bacon
- 1 slice American cheese
- Cooking spray
Use a fork to split the English muffin in half. Toast the English muffin. Place 1 slice American cheese onto the bottom half of the English muffin. Melt 1 tablespoon of the butter in a small skillet over medium high heat and add the Canadian bacon. Sear it on both sides for about 45 seconds each. Transfer to a plate. Wipe out the skillet with a paper towel. Coat a metal (2 3/4 to 3 1/2-inch) round cutter or canning ring (regular or wide-mouth) generously with cooking spray. Melt the remaining piece of unsalted butter in the skillet over low heat until bubbling. Place the ring in the pan (upside down if using canning rings). Crack the egg into the ring. Break the yolk with a fork and heat until firm. Gently remove the egg from the ring. Place egg onto cheese-topped English muffin half. Top the egg with a piece of Canadian bacon and close with the top half of the English muffin.
