A week or so ago, The Washington Post published its 30 most popular recipes -- and one of the top spots went to this simple recipe that is so simple and easy.
Spread Dijon (or any) mustard over a chicken breast (with or without skin) and pat on a mixture of bread crumbs, parmesan, dried herbs, salt, and pepper before
baking at 350 for 30 minutes or until a meat thermometer reads 165 degrees.
Use about a tablespoon of bread crumbs and parmesan for each breast. Use some olive oil or olive oil spray on the baking sheet before putting the breasts in the oven. Serve with a green salad or vegetable. Super simple, super easy and very good.
We used one large Misty Knoll skin-on breast and coursegrain (country-style) Dijon mustard.
