Carrot Cookies

Carrot Cookies

¾ cup sugar
¾ cup butter
1 egg
1 teaspoon vanilla
1 cup cooked mashed carrots (3 to 4)
1 orange rind grated
¼ teaspoon salt
2 teaspoons baking powder
2 cups flour

Cream sugar and butter. Add egg, vanilla, carrots and rind. Blend well. Add salt, baking powder and flour. Drop by teaspoon on greased sheet. Bake at 325 degrees for 25 minutes. Cool.

Frosting

1 orange rind grated
Juice of 1 orange
1 tablespoon melted butter
Powdered sugar

Combine ingredients. Spread on top of cooled cookies.
